HiR is the Integration of “Him” and “Her”

The name “HiR” represents the integration of opposites. HiR Fine Dining is the creation of Mercedes Noam Kostucki, an artist, entrepreneur and creator. HiR Fine Dining combines refined and luxurious food with a rustic and casual family style environment.

HiR Fine Dining Franchise is a family of chefs who subscribe to the same values, and follow the same general principales to create an intimate and memorable experience.

The food we serve has to be top class, and that is without question one of the filters to select Franchises. And that is the baseline. What elevates the culinary techniques is the creation of an overall experience that positively multiplies the taste of the food.

Creating memories is with more than presenting luxuries. Luxurious ingredients and gimmicks may be flashy but they don’t create long term memories. FRANCHISE

In 2023, there will be 10 spaces available for HiR Fine Dining Franchises. The number is kept small to give each person the best attention possible.

  • GOALS - CREATE AN INCOME OF $105k to $720k PER YEAR

    Income from HiR Fine Dining Franchise will of course vary based on your skills, personality, your location, and the clientel you attract.

    • $105k = Lowest Goal - The minimum price per person for HiR Fine Dining Franchises is $120 per person and to serve a minimum of 2 dinners with 10 guests every week. With 1 month of vacation per year, that’s $105k per year. Anything less than that will be considered a failure.

    • $192k = Success Goal - The goal for Franchises should really be to reach $160 per person by the end of the first year, and serve on average 3 dinners of 10 people per week with 2 months of vacation, which is an income of $192k.

    • $720k = Aspirational Goal - Given the market of fine dining, with consistently great ratings by guests and a good social media presence, within a 2-3 years of starting a HiR Fine Dining Franchise, price for dinner can reasonably reach $450 per person and a chef could be booked 4 times a week with 10 guests per night with two months of vacation. That generates $720k per year.

  • FRANCHISE PRICING - $24k PER YEAR

    From the overall price, half go towards the mentoring program, and the other half go towards the franchise benefits. Payment for the program is done upfront. Financing can be negotiated depending on circumstances.

  • MENTORING PROGRAM

    • 1 week Retreat in Costa Rica

      Over the course of a week, you will shadow Chef Mercedes Noam Kostucki in her own home. You will live with her and see from the inside everything about how she runs her restaurant. You will cook with Chef Mercy and sit in dinners she serves to paying guests so that you can experience the dinners first hand. Through this week, you will receive 1 on 1 coaching and mentoring, and you will design your menu and answer all questions and concerns you have about how to run a HiR Fine Dining Franchise. By the end of this week, you will have all the basis to set up your franchise. Throughout this week, you will be filmed and taken in photos to create content for your social media and HiR Fine Dining.

    • 1 week of 1:1 Mentoring during a Home Visit

      Within 1 to 2 months of the Costa Rica Retreat, Mercy will visit you in your home. The experienced will be flipped. She will stay at your home, and you will cook dinner for your guests. Mercy will shadow you, coach you, mentor you and push you to create the very best experience possible. Mercy will also take photos and videos for social media.

    • 2h / week of Group Coaching

      Every week, there is a 2h group coaching conversation will all franchises. We will share stories of challenges, and celebrate successes. For these 2h, we will learn from each other and elevate all of our cooking and businesses.

    • 2h / Quarter of One on One Mentoring

      At the end of each Quarter, each Franchise will have a 2h one on one conversation with Mercy to talk about how they feel, where they’re at and share what may be difficult to share during the group coaching sessions. These will also be a moment to review numbers and assess the success of each Quarter.

MEET MERCEDES NOAM KOSTUCKI, THE CREATOR AND CHEF AT HiR FINE DINING

I am an explorer, a creator and a guide. I love to try new experiences, and create similar adventures where I can guide others.

In everything I am and do, I'm naturally drawn to bringing things together that normally are not supposed to.

I have no formal culinary training and never worked in a restaurant before starting HiR Fine Dining. I have worn a lot of different hats, and my main professional background is in business coaching. My first call of fame was at the age of 23 for a TED talk about "selfishness is the best reason to cooperate".

Then I got the privilged to speak about entrepreneurship at prestigious institutions like Harvard, and the School of Economics, as well as give training and consult for governments on Country Branding and Social Innovation.

Today, I have published 9 books, and I live in Costa Rica where I coach entrepreneurs / creators to make money while living magical lives, and I cook food at my home for guests from all over the world. 

HiR Fine Dining is luxurious fine dining in a casual, rustic and family style environment. Guests are invited to my home, and I do evertyhing... from cooking to clearning, answering the phone and even cleaning the bathroom. 

HiR Fine Dining is journey into my world, life and food. HiR Fine Dining is an intimate adventure.

REQUIREMENTS

  • Passionate Home Cook or Chef - Mercedes Noam Kostucki started with no professioal culinary experience. She’s a home cook who grew into a chef. You don’t have to have attended culinary school or worked at restaurants, but you must be able to produce a minimum of 5 amazing dishes. You must feel comfortable in the kitchen and have your own ideas and creations. You will receive guidance and advice to enhance your cooking, but you are expected to already be confident to compete with a restaurant level chef.

  • Have a space to host dinner at your home - One of the principles of HiR Fine Dining is that chefs serve dinner in the comfort of their own homes. This mean you don’t have to invest in an expensive restaurant space, no hiring of staff until you have too much work for yourself and you get to cook in your own kitchen. You must have a space where you can book cook and serve dinners, ideally where the kitchen and dining spaces are open to each other. The setting does not have to be restaurant-like, nor luxurious. It has to represent your personality.

  • Charisma and enjoying sharing stories - You will receive people in your home and there will be no hiding behind waiters. You have to talk with your guests and share stories. You will learn how to tell your stories in a fun and exciting way. You will also be required to film yourself for social media. You don’t have to be an expert in public speaking nor video production. However you must be willing to learn.

  • Entrepreneurial mind and discipline - The franchise includes strong support in the form of coaching, mentoring, guidance, and hand-holding, but nobody can do the work for you. You will have to overcome challenges, learn to do things you haven’t done before, get out of your comfort zone, and grow into a successful chef and entrepreneur.

  • Geographic Location - Mercy proved that is possible to be successful in the middle of nowhere and fairly far from a central hub, and she has clients who travel up to 2.5h each way to eat at her place… BUT… she also benefits from 1,700,000 tourists who visit the country every year and are there to spend their money. Based on these Mercy’s numbers, to be successful it is highly recommended that you have access to a pool of around 1 million people within a 3h radius through nearby cities or through tourism.

  • Resource and Resourcefulness - To build a HiR Fine Dining Franchise is ridiculously cheaper than building a regular fine dining restaurant… but it still requires some investment. You will need $24k for the franchise cost, and you will need a budget to upgrade some elements of your kitchen or dinining area, to get a better phone or camera, travel to Costa Rica, and invest in ingredients for your cooking practices in between many other things. Be ready to have a few months of cushion because you may not break even in the first few months. If you don’t have all the money at hand, you can be resourceful and find loans, create crowdfunding campaigns or strategic partnerships. Starting a Fine Dining restaurant in your home is an adventure for the bold and resourcesful!

  • Candidates who meet the minimum requirements to have a chance at being successful will be invited for an interview. At the end of the interview, one or more challenges will be set for each candidate to test their how good you are at pushing your best abilities and how willing you are to work on your weakest abilities.

  • Candidates who pass the challenges will be invited on the program. When payment is received, the program starts and dates are set for the Costa Rica retreat and the home visit.
